My boyfriend is a Subway franchise owner and he tells me they are as follows:

Monday is Turkey and Ham
Tuesday is Meatball
Wednesday is Turkey
Thursday is BMT
Friday is Tuna
Saturday is Roast Beef
Sunday is Chicken Teriyaki
