Is that the first time you have managed that?
The secret is to have the oil smoking and keeping the batter in the fridge until it's needed.
My Mum used to make one big one and sometimes (don't know why) it would collapse and become a bit stodgy- I loved it like that. Also liked it cold with jam on.

Vulcan, yes you’re right , I done a lot of different recipes but this one was far the best yet

Never had them with jam Margo ?
Well it's only like pancake batter when you think about- only tasted right if it was a bit stodgy. Mind you I'm talking about a long time ago I might think it was awful now. My go to recipe is Aunt Bessie :-))

Sounds as if your daughter made a good choice in her husband.
I'm glad you're happy with them, Bobbi. I'm just a bit puzzled because I make the best ones I've ever done using James Martin's Grannie's recipe and that involves leaving the batter in the fridge for4 hours at the very least and I usually make it the day before.

I'll give your a try. At least we're both happy! :)

My mum made some amazing ones last time we went for Sunday Lunch. I might make a toad-in-the-hole one of the days.
How are you feeling now, Margo, after your bout of illness?
