I am making sausage rolls in advance of Christmas. Do I freeze them before the puff pastry is cooked or do I cook them, let them cool and then freeze them? And what should I do when I want to use them - defrost first?

Delia says freeze raw and cook from frozen

You can cook them first but the pastry is very fragile and can crumble making them look less attractive

sparklyjude I would too. You could even, if you have the freezer space, prepare them as if they were about to go in the oven ie put on a greased baking tray, glaze with egg. Freeze on the tray then cover them up. Cook from frozen straight into a nice hot oven.
