I need to make icing for my Christmas cake. Two questions- can I make it without using (raw) egg? Also I have a hand whisk (Argos bargain one). Is this going to work or do I need a food processor? I want the icing to be really thick and stand up in peaks.

you can buy dried egg white that will make you excellent royal icing if its the rawness that is an issue for you. There is even a special egg white mix for it. I rememeber the days when dinosaurs walked the earth and you didn't have powered kitchen tools unless you were rich and or a professional chef. Its perfectly possible to make royal icing with a hand whish or even with a balloon whisk. Its harder work and takes lomger though
