Is there such a thing ?
:-)
Can only suggest websearching for vegetable curry. Cauliflower might be a decent base vegetable. Maybe take a recipe you like and substitute that for the meat ?
I just chop up lots of veg, onions carrots cauliflower courgette pepper etc, sauté for a bit then add a jar of curry sauce and a tin of butter beans.

Plenty of others on the bbc site too if you have preference for difference veggies or pulses to include or avoid. Cauli is often popular in a curry, as are potatoes, chickpeas and squash.

Once you've made one you like you can easily freeze a batch for future midweek nights when you want to eat meat.

Good for teen smow, proud of him! And of you for helping him so.
