is there a way to make a decent simple ice cream without needing fresh milk or cream?

i dont often by fresh milk or cream you see but often get the urge to make ice cream but dont have the ingredients in.

i often have eggs and butter in - not always but they are an option if needed.
i want ingredients i can buy and just leave at the back of the cupboard 'indefinitely' really.
i am veggie so dont really want to use gelatin (unless the veggie stuff?)

any ideas or recipes?

i looked online but so many include powdered - but also cream, or even more milk.
can you make it with UHT milk?

If you scroll down to the comments after this recipe you will see that someone used UHT and it worked well.
You can freeze milk and cream. That might be an idea.
