Freezing Gammon

I'm going to cook a joint of gammon to make some sandwiches (a LOT of blinking sandwiches). I was thinking of cooking it in advance and then freezing it. Does cooked gammon freeze OK? It will only be in the freezer for about 4 weeks.

Also do you recommend slicing it before or after I freeze it?

Yes, it freezes well. I would slice it first, but be sure to wrap it well for the freezer.
I'd slice before freezing.....expecting a long case in court...?

I've only got 5 weeks and I have several hideous trials to get through as well as preparing all the food.........

Next question is how much do I buy? I want about 25 slices. I tend to do it by sight rather than weight but am ordering online. Any ideas?
I buy a huge gammon every Christmas. After its cooked (I boil mine in cider, much better than roasting in my opinion) I slice it, put about half a dozen slices into lots of plastic bags and freeze them. It doesn't matter how big the gammon is, once you've cooked and frozen it you can just leave what you don't want immediately in the freezer and use it later. I'd get the biggest one you can get, that way you're sure you'll have enough.
Lakeland Limited do some thin plastic on a roll to interleave with food before you freeze it. You could layer a few slices with that and then only take out what you need at a time. I use it all the time to line plastic boxes that I freeze chilli, spag bol etc in, and then remove it from the boxes and place into poly bags to save space in the freezer.

I'd allow a 2 oz slice for a decent sandwich, so probably a five pound/2.5kg gammon, for moistly cooked
