Never cooked aubergines before so an easy recipe please, thanks all x

Fry off a stick of celery, a carrot and an onion all finely chopped with a clove or three of garlic. When soft add passata and some dried oregano and cook off for a few minutes.

Slice an aubergine thinly (5mm), brush with oil and cook on a hot griddle pan, turning when coloured.

Layer tomato sauce, aubergine, sliced mozzarella and shredded basil....repeat...finish with tom sauce, mozzarella and a handful of Parmesan.

Extra touches can be added, slices of skinned peppers, courgette cooked as per aubergine and a handful of breadcrumbs with the Parmesan adds crunch.

Oh flippin' heck......and bake in the oven until brown and bubbling! 180c about 30-40mins.
This is how I learned to make it...
Slice aubergine not too thin...,maybe .5 inch thick. Dip into flour,then beaten egg...fry in olive oil until golden.You can also just fry in the oil.
Make a tomato sauce by gently sauteeing some crushed garlic and diced onion until soft. Add to this some basil and oregano,and a carton of passata. Let simmer gently for 30 minutes.
Spread some sauce in the bottom of a oiled tin. Lay a layer of aubergine,sliced mozzarella,and grated parmesan, topped with tomato sauce. Continue until all is used up. Bake in the oven for about 35-45 minutes. Let cool slightly before slicing.
I do mine the same as Pasta but I add a tin of peeled tomatoes to the passata when making the sauce xx

Sometimes I used tinned chopped toms...depends on my mood, ;-))

Probably. Nonna taught me years ago how to make it. I love it, great comfort food especially with loads of ooozy mozzarella! Yum! X

My version is based around Valentina Harris's recipe, she's not bad in the kitchen.

Hopefully from all the suggestions Smurf can find something that suits her.
