Hi,

Now ive been looking at this recipe for Snail Porridge from the 'Fat Duck'.

I feel a bit stupid asking this but when he says 'Snails' what does he mean?

Are these snails the type found in the garden or are they some special breed of French Snail from the Snail region of North Eastern France?

Thank you, you two.

Im not sure how proper it is to answer your own questions but i spoke to a Portugese friend of mine about this. They eat a lot of snails there.

It goes like this. there are different types/species of snails. some considered better than others. but you shouldn't just eat them from the Garden. They are breed on a certain leaf only. Then fattened on a special sweet leaf. Then for the last 2 days they're put in flour, which they eat. this flour cleans them out and they can then be eaten.

Hope this didn't offend too much
