Anyone had any success with this? I do not react well with flour but am not coeliac. I understand that this flour is more digestible. Also, can you make a sourdough starter out of spelt?
Thanks anyone. could look on Google but thought I would ask you nice people first.

Made a spelt loaf once. It was edible but seemed lower quality than the normal loaf, which must mean it was better for me.
Spelt is closer to the flour our ancestors ate. It's not been messed about with by the likes of Monsanto etc.
I've not baked with spelt( I rarely eat bread any more )-tho I used to make my own)

Here are some recipes for spelt loaves-they may be useful.
