My wife and I have made our own jam for years, using some powdered pectin, called simply "Pec" that she brought with her from Belgium. Now that has run out and we have tried so called "pec-sugar" from Tesco, and pec in liquid form, and neither of them seem to work, basically the jam refuses to set at all and just remains liquid in the jars. Any help or suggestions would be appreciated!

I make jam at this time of the year because we go and get "pick your own"strawberries and I use Silver Spoon Pectin which I get from Asda.I use one sachet to a kilo of sugar.
Try adding some lemon juice.
Iuse silver spoon pectin as well but also available in supermarkets is a liquid called Certo which is apple pectin, this is available all year round whereas the powder pectin is not available during the winter months as we found out from silver spoon they do not produce it until about March.

Thanks for those replies, Romaz, the recipe we were using calls for some lemon juice to be added, so we have already done that, and billearly, the liquid stuff is what we have just tried, with poor results. I am going to look around for the silverspoon powdered stuff, Tesco dont seem to stock it, and we dont have an Asda where I live.
try sainsbury's it is in a dark blue box with the sugar good luck
