Has anyone ever done this? It`s twice as much sugar as fruit. Seems an awful lot.

SJ, Seville oranges are very bitter hence the need for so much sugar. I've made this recipe in the past and it came out very good. http://tinyurl.com/bk3etl9

Thanks society. I`m three quarters of the way through Delia`s one so I guess I`ll see what happens but I have more oranges so I`ve bookmarked your recipe and might use that for the next batch.

Well, it works. It`s lovely. Might put some Grand Marnier in the next lot.

I love Delia's recipes. If I follow them properly they always work.
I've got a Marguerite Patten recipe for Seville Orange Marmalade which also has twice as much sugar as fruit. It's absolutely correct and tastes wonderful without being too sweet - definitely a grown up marmalade.
