Tonight for dinner I'm cooking roast chicken. I want to make as much as possible, for easy reheat for dinner for the next couple of days. I'm skint.

1 Large Chicken
Potatoes
1 bag of carrots
Onions
Tomatoes
Garlic
Bay Leafs
Dajon Mustard
Chicken Jelly stock

I'm going to roast the chicken on its own with some jelly stock, bay leafs and garlic, also sprinkle the chicken skin with salt to make it crispy. In another roasting tin I'm going to roast all the chopped veg & tomatoes, also with bay leaf, garlic, dajon mustard and chicken jelly stock.

Not rocket science I know but this dinner has been strategically planned on a budget.

If it's a nice large chicken,you should get a couple of dinners,and several more lunches,plus stock for several servings of soup. When I do a big one,I portion it for the freezer straight away-otherwise I'd be picking at it. For a dinner,I'll simmer it a bit in stock to heat up-then add cream and seasonings-like Dijon mustard. Some bacon could be added to that...

Boil the carcase, handy stock for soup.
Don't forget to boil the bones with an onion and a bit of seasoning for soup.

Sounds like a basic but tasty supper. How about adding some sage to the stock?

Don't forget you can do a chicken risotto too, padded with all sorts and served with pitta bread.

See when you say "boil the bones with an onion." Do you literally boil the bones with a raw onion in the water? Or do you boil the bones, then fry an onion and add the onion to the stock? What's best?
I wouldn't roast all the veg - keep some back the same with tomatoes.

Once picked clean of chicken stick the bones in a pot cover with water and boil, stick a raw onion in with the bones some bay leaves bring to the boil then simmer for a few hours still the bones collapse.
A little tip. If you shred the cooked meat with a fork, it goes much further than if you slice it.

Carcasse in large pot...add water to cover. Add chunky carrots,onion,celery...seasoning.
Bring to boil,then reduce heat and simmer for several hours-to get all the goodness from the bones and meat. Strain.
A stick of celery in the water helps the stock too.
oohh! I thought you were going to give me an idea what to have coz I can't be arsed tonight. I think I'll shove a Pizza in the oven with some garlic bread & do a green salad. Afterwards a Cadbury Choc Mousse. Glass or 2 of Hock.

+1 for what naomi said,shredding does seem to 'stretch' it.
And if you get a leak or three you can get a couple of good helpings of leak and potato soup without any extra expenditure.
If you want a simple recipe just ask.
shoota, you need a plumber for a leak, not a recipe.
Get the chef to sort it, if he shows.

The chefs not showing, he's not replied.
Definitely add the tomatoes day by day, the roots will reheat fine but the toms will disintegrate.
