What is the best way to eat these raw? I also find it difficult to tell when they are ripe - when they are a bit black inside, is this ripening or bruising?I would like to try and take the core out of the middle, and leave the fruit complete, but haven't discovered an easy way to do that either!

Great link, thanks healthfield
Sharon fruit are not true persimmons but an altered kind. Real persimmons cant be eaten until they are really really overripe. Before that they set your teeth on edge. Sharon fruit can be eaten when they are hard right through to when they are soft and pulpy.

When sharon fruit were first sold you used to get the odd "persimmon like" one which was totally disgusting but for many years now the persimmon qualities have not been in evidence.

I've only recently come across them, and found some fairly large ones in a well known supermarket a day or two ago, so bought a couple to ripen at home. I see that in the article that they can be eaten at whatever stage of ripeness you choose, but I prefer them very ripe, so the inside is easier to scoop out and eat.
Eaten hard, they are like eating a conference pear for consistency but sweeter and more fragrant. I eat the skin as well but you can peel them when they are hard.
