Easiest Victoria Sandwich recipe ever!

200g caster sugar
200g soft butter
4 eggs,beaten
200g SR flour
1 tsp baking powder
2 tbsp milk

Preheat oven to 190 degrees
Put all ingredients into a bowl all at once and beat to a smooth mixture. Divide between 2 sandwich tins and cook for 20 mins or until golden.

For the filling mix together 100g soft butter,140g icing sugar and couple drops of vanilla essence. Spread on one side of the sponge when cool, spread the other with raspberry jam and put together. Sieve icing sugar on top. delicious!

Self-raising flour and baking powder?
Yes heathfield... the 'easiest' and the 'highest' Victoria Sponge ;-p
The one I do has the same quantities but it doesn't have the baking powder and milk. Yours must be huuuuuuuuuuge Smowball! lol xx

Lol, I didnt make the recipe up, it was in a book of mine but of all the ones ive tried this is the easiest and yes it rises very well, but is still light and fluffy
Today I was left to look after myself while Trish went shopping with my sisters so I decided to give your cake a try and I must say it looked great. I say it looked great as I made the mistake of nipping out to Tesco and when I got back Trish and my sisters had scoffed the lot, all I got was a few crumbs and the comment from my sisters that could I make two next time so they could take some for their husbands.
must you use butter, could i use margarine?
