Once the potatoes have been boiled and strained, add ground black pepper, little salt, good dash of milk, knob of butter, two cloves of garlic cloves (optional) and mash together - delicious!
if you have the time look up Hestons method from "How to cook like Heston" on C4 catch up. It is long and involved but if you have the time it is worth it. At home I use the K beater on the Kenwood.

By the time everyone has "messed" about with mashing, straining, forking et al, the mash will be cold. Best mash for me is...Cook thoroughly until the potatoes are falling apart. strain and mash really thoroughly with conventional hand masher, adding just butter, pepper and salt and mash until smooth. This way the mash stays hot.
Errr...you can keep it on the heat.
Oh and it doesn't burn when not in waterand put on heat? Sorry...I prefer to mash and get to table asap...perhaps I'm being fussy...
