Hi coming from the eastend, we have always called Bagels, Biegels, dont ask its an eastend thing! Anyway I used to go to the local bakers, and watch them being made, but cannot remember whats added or taken away from them, to give them that unique taste. Anyone know. Thanks

Bagels are boiled before baking, to kill the yeast so that they don't rise any further. This gives the bagel it's distinctive close texture.

I come from Harlow - but used to work in Edgware - they called them biegels there too.
