I don't take any credit for developing this recipe, but I can attest to the fact we've used it a number of times here in the U.S. and, so far, everyone has really liked it...

Ingredients:
15 Satsuma mandarin oranges, peeled and sectioned
6 cups water
1 cup sugar
3 tablespoons ginger juice
peels from 3 mandarins
1/4 teaspoon freshly filed nutmeg (optional)

Directions:
Prep your jars and lids. Evenly divide the segments between the jars. You should find that each jar can hold 3 mandarins’ worth of segments. Bring the sugar, ginger juice, nutmeg, peel and water to a rolling boil. Stir to dissolve the sugar. Discard the peel. Ladle into cans, leaving ¼ inch headspace. Seal and process in a water bath for 10 minutes.
have you bought them yet june? I got some in marks's today - teeny tiney baby ones, they are so sweet!
