I've dried fruit on a very very low gas in the oven, I wouldn't do it again.
We store dehydrated foods here in the U.S. for lengthy periods of time. A good dehydrator should be of sufficient volume for your purposes and your storage area should be suitable... low humidity, semi-dark well ventilated...
My wife and I have used one for many years, as she has 2 allotments it is really useful, summer or cheap fruit does so well also of course tomato's, have a look on line for recipes, we used this to start off.

Don't do onions unless you want the house to smell like a hotdog factory,or leave windows/doors open when you can.
Have fun
