Due to a mix up at the grocers i accidentally bought 2kg of spuds. Anyone know a good simple recipe that uses potatos?

If you have some leeks make potato and leek soup and freeze it.
Dauphinoise potatoes can be frozen too

this is lovely either on its own or with meat/fish or burgers and probably would be nice with sausages too but ive never tried it with them.... make more than it says as it freezes okay :)
Also potato curry and sausage and potato casserole...all freezable too
Cheese and potato pie, or cheesy mashed potatoes to accompany a roast . .

Potato curry could be a winner.
One of my favourite recipes from Curnonsky, "the prince of gastronomes" late 1800s -
Pommes de terre en robe de chambre du Blesois -

3/4 lb fat pork
4 1/2 lb washed potatoes (maris piper or large edwards are good)

Dice the pork.
Cut the potatoes into discs without removing the skin.
Put a layer of pork in a cast iron casserole, followed by a thick layer of potatoes.

Add further alternate layers, seasoning with salt & black pepper.

Cover & bake for 2 hours at about 160, until a knife goes right to the bottom.

Easy!

You get tasty steamed spuds at the top, and virtually fried spud at the bottom. I sometimes add a bay leaf, and a few drops of good stock.
I might have to go and make some now - you can put a layer of chicken or whatever towards the bottom as a one-pot meal...
Sorry to keep popping on here! I was also thinking you could also make home made gnocchi which freezes really well
