I have done so with cheddar in the past. But it is a bit crumbly after defrosting

its ok , i have just googled it and apparently i can freeze it ;-)
Yes, I do always, but you will find that when you thaw it out it will be more crumbly.
I found it's better to slice or grate it first - also you may find it more salty after, and it won't last as long in the fridge once defrosted, so either cut it into managable sized blocks you'll use up quickly, or like I said earlier, slice or grate it.
Besides being a bit more crumbly, I've found the flavour diminishes slightly, too.
