when i got my lovely fillet yesterday, we also got some English lamb cutlets that were on offer. I haven't cooked chops for such a long time, they are quite small, and I like my meat medium rare nowadays.
I don't want to put them in the oven all day like my mum used to! Nor do I want them bloody and raw looking, like they sometimes appear on Masterchef!

How do you cook yours? I don't want to ruin them! Do I treat them as I did the fillet? How do I get the fat crispy?

I grill them. I grill them quite high to crisp the fat...both sides. I find they come out nice and pink...

for how long-ish, ummmmm?
2 or 3 minutes....but I tend to judge it by the fat.
I'm with ummmm - grill them. A dab of garlic butter on them as they go under the grill is good
season and rub with some olive oil. fry in hot pan 3 minutes each side.
Whenever I fry chops they are incredibly tough. I'm afraid I follow my mother, bang 'em in the oven on a low gas for a few hours.
