What exciting things can you do with rice that won't outdo the main meal.  I mean I still want rice to the side dish, so don't want it to be too overpowering.  Any ideas?  Ta.

You can try adding some of the Knorr Rice cubes if you want a quick and easy solution.

 

Otherwise, try frying half an onion, finely chopped in some butter. Then add the rice and the water and bring toa simmer. About 5 minutes before the rice is done add a few frozen peas, some sweet corn and finely chopped red pepper.

you can mound hot fried or boiled rice into dariole moulds or even clean empty tin cans, eg tuna fish cans lined with oiled cling film. Press the rice down quite firmly and let set 2 or 3 mins then turn out onto a warm serving plate. This works for rice with "things" in provided that the bits are quite small
You could sprinkle it with saffron strands and cashew nuts chopped into slivers so it looks pretty?

I make "Tomato Rice".

Use long grain rice, add juice from an orange, a pinch of nutmeg, one finely chopped onion, and a can of chopped tomatoes. Do NOT add any water. Good gently until the water from the tomatoes has worked it's magic and been fully absorbed. Final result should be heavier than straight rice but the flavour doesn't overpower other parts of your meal.

Follow Ursulas recipe and a good alternative to the peas is chick peas. Just drain of the water and put into the rice instead of the peas.
mould it as woofgang says, but sprinkle a little turmeric in the bottom of the mould first
I love to fry 2 slices of bacon cut in strips then add frozen peas then add the cooked boiled rice and a little soy sauce
