If I'm selling an item on eBay, can I see who the bidders are that are "watching" my item?

You can see who bidded on it by clicking on "bidding list" on the description page.
I'm not sure about watchers but I know it tells you how many people are watching it.

No, you have no way of knowing who is watching.

As soon as they bid, they are no longer watchers, if that is any help.
