Variable or Fixed Rate mortgage dilemma??

I am finalising my mortgage tonight with my lender and am wanting to go with a variable rate, due to the current low interest rates... any thoughts on this - I also take the risk of the interest rate increasing periodically though.... mmmmm dont know what to do... help !!
