Under VAT rules, if I deliver goods to a customer today but don't send them an invoice until the end of the month, should the tax date on the invoice be 3rd January or 31st January, or doesn't it matter given that both dates fall within the same accounting period? Thanks in advance for any info.

AFAIK It doesn't matter (from a VAT point of view) - but you need to remain consistent.
You have to show the date of supply if it's different to the invoice date
