Lemon meringue suitable for coeliacs?

I was going to make a lemon meringue for someone I know who is a coeliac. The ingredients in it are

1. Plain flour
2. Caster Sugar
3 Water
4. Lemon
5. Butter
6. Cornflour
7. Eggs

I know that flour is a big no no, but is that also the case with cornflour or any of the other ingredients listed? What I was looking to know is out of the ingredients above, which are suitable/unsuitable for coeliacs and what alternatives should I use?

Any sort of flour will contain gluten, which potentially is the substance coeliacs have an intolerance of, although the detail varies from person to person. Even beer (because it's made with barley) is often a no-no. The best idea is to check with the person whether a particular ingredient is okay.

Water/butter/sugar/lemon/eggs should all be okay.

Have a look in your local supermarket - most have some sort of gluten-free "flour" on the shelves - rice flour, tapioca flour etc. They may also have a gluten-free ready-made flan case.

There are some quite good recipes on www.recipes4us.co.uk for gluten free, but some of these also include cornflour so I say again, the best plan is to check with the person.
Hi flob you cant use ordinary flour as telb has said,if you cant find gluten free flour in your supermarkets try a health food shop

I have a friend who is a coeliac sufferer and he can eat cornflour, but
as tel b says it is best to ask the person.

Thanks I'll check out the gluten free flour. I might even try the biscuit base recipe for myself. Wonder what would be the best type of biscuit to use.
Don't know if you can get gluten-free digestives but they're very good in a biscuit based tart.
