Why do I get a dry throat whenever I'm nervous?

Simply because you are nervous! It's part of the 'fight or flight' state your body goes into because you'd rather not be there. What happens is that the nerves to your mouth that control the salivary glands are suppressed. You may be aware of your heart beating faster, too as the blood vessels to your heart are enlarged so you can get ready to run.
