Drying courgettes

I'm overwhelmed with courgettes from my veggie plot and since they contain too much liquid to freeze would like to experiment with oven drying them.

Has anybody ever tried doing this and know of a recipe and some suggested ways of using them afterwards?

I used to make courgette bread and courgette cake (a bit like carrot cake only with little green bits!).  When we had a glut of courgettes I'd grate them and freeze in appropriate portions in little plastic bags.  No problems with excess water!  Or I'd make a pile of ratatouie (sorry - can't spell) and freeze that.  Great to eat in the middle of winter for a taste of summer......
