sculptors- mistakes

how dies a sculpture correct a mistake on a piece of work he is creating?, i would assume sculpters have to be very careful with very little margin for error, especially on intricate details like a face or object perhaps and they chip or carve away too much or in the incorrect way

I remember a sketch on a TV program - I think it was 'Monty Python' - that tackled this question implying that there was no going back. Michaelangelo made one final miniscule tap to his 'David' and instantly emasculated the poor guy.
