Do you mean the American fluffy buttermilk pancakes or crepe-type pancakes?

Ok
4 oz plain flour
2 eggs
200ml milk
75ml water

Sift the flour, make a well, crack the eggs into the flour and whisk together. Mix the milk and the water together and gradually add to the egg mixture whisking all the time until it is the consistency of single cream.
Melt a little bit of butter in the frying pan, pour a ladle of the mixture into the pan and allow to cook. Toss them in the air if you are brave or just flip over with a spatula.
