In the absence of an answer to my question 'shooting what', I'll point you to a site where you can find the shooting seasons for quarry and pest species, both airborne and ground based. RSPB reserves are still subject to these seasons which are covered by law. It is possible to get a 'special licence' to shoot species which are causing a specific problem out of season.
