hi, does anyone know what the usherette faling through the floor is supposed to represent?

I think she represents what your heart does when you get on a Virgin plane and see you're surrounded by drunken hen + stag parties.
I've just seen this ad for the first time. It's very classy but it would make me worry that they hadn't shut the plane doors properly. Goodness knows why the air hostess disappears through the floor. That bit's creepy.

Virgin supplies ice cream on thier flights (it is stored in dry ice until served.

I assume that since there is a movie playing in the background (dramatic licence since VA use seat back screens for movies, etc.) there is a play on her being a cinema usherette.

I have always assumed that she is melting like ice cream as the dissolve to the next sequence..

I think the lines at the end are quite good though - and the image of one of the girls removing her shoes at the end to relax.
