Cockerel is good meat; more flavoursome than chicken, but it's also tougher, so it requires slower cooking.

Capon is nice as I have eaten it......castrated Cockerel as coccinelle suggests.

If its an old cockerel I would stew it as it is stringy and quite gamey- if its a young capon treat as standard chicken it has a bit more flavour
