I don't want any recipes but i just wanted to know if there's a basic method of making chutney. I'd like to have a go at some combinations such as mango and ginger or apricot and tomato etc etc.
Experiment!! Don't be afraid to add things like chili if you like a kick, get yourself a decent pan, NOT aluminium, it'll taint when you put in vinegar. Also a sharp little knife and a wooden spoon , let it boil for the time stippulated, and let them 'mature' after you've potted them - most taste better after a few weeks to let the flavours come through.
There is a great book out called RMS Titanic "dinner is Served" by Yvonne Hume, it has good Titanic and everyday recipes in it, including a tasty chutney.
