pepper and butter is nice. I guess you could add tabasco if you like it spicy!!

Is the fish the one in saffron ? Given that saffron is such a delicate spice and sweet & sour peppers quite a strong flavour, I think I would simply add butter and black pepper to the spinach or it would overwhelm the fish. What carbohydrate are you serving up ? Plain rice would work well here btw.

Oooppppssss....sorry... *shamefacedly* .... just finished eating the last one ;)
Apologies to you, bubbles - I don't think cheese scones will go very well with your fish in saffron somehow though...lol

I usually stir fry my spinach with onion and just add lots of pepper. It's lovely and tasty like that.

I would have it raw and untainted.
So much better. And cold salad leaves are nice with a hot meal.

Place spinach in pan on heat and stir in some cream cheese. Only takes a minute.

lightly fry your fish, put to keep warm, in same pan add spinach, till it wilts, then a tub of Philly or similar, squeeze lemon, some crushed chillies, pour over fish. Tastes lovely, and looks almost cordon bleu.
