what is the flavour of saffron?

i am about to marinade some fish in saffron and olive oil. what is the flavour of saffron? it the bottle it smells just like dettol! the recipe says to marinade the fish 20 mins before cooking, do you think doing it hours before will totally overpower it?

If you don't like the smell bubbles, I would do the 20 minutes if I were you!!

Its bitter in the raw form but cooked there's no taste.....its only a colorant

Saffron has quite a delicate flavour, hard to describe though ! It will go on developing for about 12 hours, so I'd stick to the 20 minutes in the recipe. Don't be tempted to add any other flavours to the marinade other than the olive oil - they are more likely to overwhelm the saffron.
