I noticed some tripe in the butchers this morning. Is it already cooked and would it be OK in sandwiches?

What type of tree...

There's a tree growing locally which has produced a crop of small pear like fruit. The flesh is tan coloured and has a pleasant appley aroma. Any idea what it is?
