I`d take Chinese and some sterling. I`ve only ever spent in markets/restaurants but it`s always in local currency. Some hotels have cash machines where you can feed in sterling and get local currency out which is really handy.

I never found any need for dollars. A credit card is much more useful.
Take some yuan or change some money there. The markets like cash not card.
In the markets (in Beijing), I was asked for dollars, used local currency otherwise.
Not sure but I would recommend you pack some Imodium !
There was recently ( and may still be) a limit on how much Chinese Currency you can buy outside China. I got mine from Marks and Spencer, but I had to wait for it as they don't carry much.

You can take both. FOR SURE. In China Bank you can exchange US Dollars into Yuan. The infotmation is sure because friend of mine was there before.
