Farmfoods sell them but they are very tough. (Sorry farmfoods but its true) Putting fresh mint in when cooking does not impart a strong enough flavour

Add more mint?

Run a little mint sauce or mint butter through at the end of cooking?

Agree use mint sauce in water when you cook them and put more on them afterwards
The flavour of some herbs (including mint) "cooks out" when heated for some time. Cook the peas, drain THEN add finely chopped mint just before serving.

I can never understand why you would want to add the flavour of mint to peas, which have a lovely flavour of their own.
