Having a chemical reaction going on in your mouth is likely to be noticeable! Sherbet contains citric acid crystals and baking soda (sodium hydrogen carbonate). When water is added (via the saliva in your mouth) they react together, in a 2-stage process, to produce water and carbon dioxide.

I'd say its the acid.

I have a similar problem with pineapple and kiwi fruit. They make my tongue sore rather than the roof of my mouth though.
