Miniature Wedding Cakes

My daughter wants mini square wedding cakes, I have made normal size fruit cakes for family and friends, but I would like to know how long to cook the mini ones for....I don't want to cook them too long, in case they lose their flavour and are too dry......any help would be much appreciated...xx

i baked some mini xmas cakes a few years back in empty baked bean cans - grease them ,line with greaseproof paper and wrap the outside with a half inch layer of newspaper tied with string , this stops them from burning, leave to cool in the can and if they don't turn out just open the bottom with a can opener and push them through, i can't remember the cooking time...

If they are to be iced why don't you make a large square cake and cut them to size...it would be a lot easier
Just wondering malron - are they iced ? If so whats to stop you cutting them into smaller squares. Forgive me if this is a stupid question - would they dry out if you did ?

Yes they will be decorated with marzipan and icing....I have tried cutting up a large cake into small squares and once the marzipan was on it did not have the smooth finish as with the larger cake, the marzipan and icing would have to be quite thick for it to look totally smooth...I have also tried to do small ones using muffin cake tins, but they seemed dry, compared to my usual cake, I think I may have baked them too long....I have googled this question and one page I was on stated that she baked her cakes in a large 36 mini cake pan, for two hours, which considering they are mini sized thought that this was a long time.....anyway thank you both for your quick replies and help...xxxxxxxxxxxx
