N(atural) K(iller) around anagrammed 'tower' gives you the definition, minus the thematic thing for the entry.
N(ote) plus anagrammed 'ex-spy in' for the definition minus the thematic thing again.

They're both thematic - the first is 7 letters the second is 8 letters.

first one - NK = 'natural killer' + anag TOWER
second one - anag of N(ote)+EX-SPY IN (def 'worthless'/cheap).

I believe 'ines' is the chaste Spanish lady, with 'snob' (old term for cobler) reversed around it. That gets you the lean state, then you take away the thematic thing for the entry.
