I am thinking of reducing staff working hours from 5 days to 3 days per week due to cash flow problems.Is there anything I should do, apart from giving them plenty of notice, and are there any complications?

Are you aware that you might have to pay Statutory Lay-Off Pay to your staff? https://www.gov.uk/lay-offs-short-timeworking/overview Also, since the 'old' job (with longer hours) no longer exists, your staff might be able to claim that they've been made redundant, with the right to receive redundancy pay.
