Turkish Gozleme

Gozleme is a Turkish dish; it is a pastry parcel, similar to a savoury pancake. Gozleme can be filled with a variety of fillings but one of the most traditional is spinach and feta. The pastry is a type of flat bread which is folded over the spinach and ricotta filling and then fried. 

Gozleme is a delicious light meal, perfect for lunch, it is delicious hot and fresh but also a great idea for a pack lunch and makes a delicious change from sandwiches.

Ingredients

For the dough

  • 120g plain flour
  • Water
  • ½ tsp salt

For the spinach filling

  • 200g spinach
  • 1 small onion, chopped
  • 100g feta cheese
  • Salt and pepper
  • 1 tbsp olive oil

Method

  1. Mix the salt into the flour and knead, adding a little water at a time. When the dough becomes elastic and easy to knead stop adding water and continue to knead for a few more minutes. Cover the dough with a damp paper towel while you make the filling.
  2. Fry the onions in the olive oil, add in the spinach and cook until it wilts.
  3. Take ¼ of the dough and make it into a ball shape.
  4. Flour a large surface and with a floured rolling pin roll out the ball of dough into a large circle, the dough should be very thin and about 25cm in diameter.
  5. Fold the top and bottom of the dough circle into the centre so they slightly over lap each other.
  6. Spread ¼ of the cooked filling and cheese on to the Gozleme.
  7. Fold in the other two side, so they slightly over lap and cover the filling. The Gozleme should now be a square.
  8. Add a little oil to a frying pan and cook until golden brown with specked dark brown dots on both sides.
