Tomato Soup

Tomato soup is a simple delicious dish that so many people love, but so many have tinned tomato soup, which is pretty good, but doesn’t have the same fresh taste as homemade soup. Soup is very easy and it takes less than 45 minutes to make tomato soup. If that still seems like too much time in a hectic schedule you could always make a large pot at the beginning of the week and have a convenient healthy lunch for the next few days.

Fresh homemade tomato soup is cheap and nutritious; you will be eating more than one of your five a day, and if you are trying to watch your weight you could use yoghurt instead of cream.  Tomato soup served with some fresh homemade bread is a healthy, delicious, filling lunch or light dinner.

Ingredients

  • 12 medium tomatoes, peeled, deseeded and chopped
  • 500ml chicken broth
  • 1 ½  medium onion, chopped
  • 1 celery stick, chopped
  • 200ml light cream
  • 1 tbsp fresh basil
  • 1 tbsp olive oil

Method

  1. In a large saucepan fry the onions and celery until tender.
  2. Add the tomatoes and chicken broth. Simmer for 30 minutes then blend the soup until it is smooth.
  3. Add the cream, heat up the soup and then add the basil.
