Strawberry Trifle

Trifle is a fantastic pudding, perfect all year round. It is a cold refreshing dessert in summer that makes the most of the juicy berries in season. Strawberry trifle always tastes and looks fantastic, it should be the highlight of any summer picnic. The cold thick custard, jelly, fresh fruit and cream go wonderfully with the hot weather.

Despite being a perfect summer dessert Christmas wouldn’t be quite right without the traditional trifle filled with ridiculous amounts of sherry or various types of other booze; the smell alone is enough to make anyone feel drunk.  I wouldn’t recommend putting as much sherry in as your Nan or auntie once did, but a little sherry soaked in the sponge does warm everyone up nicely and takes the edge of the cold frosty days. If you do decide to leave the sherry out it is a wonderful layered desert that the children will enjoy. 

Ingredients

  • 1 packet of sponge fingers
  • 600ml custard
  • 300ml double cream
  • 500g strawberries, halved
  • Strawberry jelly
  • Sweet sherry

Method

  1. Line the bottom of a round glass dish with the sponge fingers, and pour a dash of sherry over the sponge.
  2. Make the jelly according to instructions on packet.
  3. Spread the strawberries over the sponge and pour the jelly on top. Save some strawberries for decoration.
  4. Chill until jelly sets.
  5. Then pour custard over jelly.
  6. Whip the cream and spread on top of custard.
