Semifreddo With Nougat

Semifreddos are classic Italian deserts. A semifreddo is any type of half frozen Italian dessert, ice cream cake, semi-frozen yoghurt or gelato. This recipe is for a wonderfully delicious creamy amaretto and nougat flavoured semifreddo, but for those of you who aren’t amaretto fans, rum taste great too, or if you want to create a simple clean but delicious flavour you can leave out the alcohol.

Semifreddo is a wonderful elegant dessert perfect for cooling down on a long hot summer’s day, so if you are not on holiday this year, make the most of your garden, sit out in the sun. Relax with a delicious glass of wine and imagine you are in a cute little Italian restaurant next to a beautiful crystal blue lake enjoying your delicious mouth watering semifreddo with nougat.

Ingredients

  • 2 eggs, separated
  • 2 tbsp caster sugar
  • 250ml double cream, whisked
  • 2 tbsp amaretto
  • 200g nougat, broken into small pieces

Method

  1. Line 4 ramekins or small glasses with cling film.
  2. Whisk the egg yolks and sugar together until pale and fluffy.
  3. Fold in the whisked cream and amaretto.
  4. Fold in the broken nougat.
  5. Whisk the egg whites until stiff, then add the mix.
  6. Pour the mixture into the lined glasses and freeze for at least 3 hours.
  7. Remove from the freezer 15 minutes before serving, tip onto a plate and remove the cling film.
