Scrambled Egg Pita

Pita bread filled with scrambled eggs and pepper is a delicious quick and easy breakfast or snack. Light and fluffy scrambled eggs are very simple but delicious and make for a perfect start to a day, add in some sweet crispy bell peppers and pita bread for a complete well rounded nutritious meal.

Ingredients

  • 2 large eggs
  • 1 tbsp butter
  • 1 tbsp milk
  • Pinch of salt and pepper
  • 2 pita whole grain pockets
  • 1 red bell pepper, chopped

Method

  1. Gently fry the peppers. Remove from the pan with a slotted spoon.
  2. Beat the eggs, milk, salt and pepper together.
  3. Then melt the butter in a pan and add the egg mixture.
  4. When the egg is just starting to set gently stir.
  5. Cook until eggs are softly set, but not over cooked.
  6. Fill the pita pockets with scrambled egg and pepper.
