Rice Krispy Chocolate Truffles

These little truffles are simple but very delicious, as rice krispies are the much loved cooking ingredient by many a child, it is a perfect recipe to do with the kids. Rice krispy truffles are unlike the traditional rice krispy cake. They are coved in a rich smooth creamy chocolate truffle, so melt in your mouth but still have the crunchy, light, texture from rice Krispies. A little desiccated coconut is added for a chewy texture.

Rice krispy truffles will go down a storm, so long as they make it past the kitchen door. They are perfect for parties, both children and adults will enjoy them and a chocoholic won’t be able to keep away. Also a great gift idea, make a little homemade box and fill with rice krispy truffles for a thoughtful homemade gift.

Ingredient

  • 200g chocolate
  • 95g double cream
  • 20g butter
  • 40g rice krispies
  • 40g desiccated coconut

Method

  1. Melt the butter cream and chocolate in a heat proof bowl over a saucepan of simmering water.
  2. When melted add the rice krispies and coconut.
  3. Refrigerate until it is firm, then mould the mixture into balls.
